For the salad dressing, combine vegetable oil, prepared mustard, salt and freshly squeezed lemon juice in a bowl. Stir the mixture until smooth, you should get a medium thick mustard-colored emulsion.
Wash a large fresh tomato, pat dry with paper towels and cut into medium sized cubes using a sharp knife. Try to cut all vegetables in equal pieces to make the dish look aesthetically pleasing and appetizing. Choose a tomato that is dense and fleshy.
